This Avocado Sweet Potato Toast is a vibrant and nourishing twist on traditional toast, using sweet potato slices as a gluten-free base topped with creamy mashed avocado, fresh radishes, and a burst of raspberry sweetness. Sweet Potato Base

  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Pinch of salt & pepper

Toppings

  • 2 avocados
  • 4 radishes, thinly sliced
  • 10 to 15 raspberries, crushed
  • Optional: microgreens and edible flowers


Instructions

  1. Heat the skillet: Heat a large skillet over medium-high heat to prepare for cooking the sweet potato slices evenly.
  2. Prepare sweet potatoes: Slice the sweet potatoes into 1/4 inch thick pieces. In a large bowl, combine a tablespoon of olive oil with salt, pepper, and garlic powder, then toss the sweet potato slices to coat them evenly with the seasoning mixture.
  3. Cook sweet potatoes: Place the sweet potato slices in the hot skillet and cook for about ten minutes on each side, or until they become nicely browned and tender inside.
  4. Mash avocado: While the sweet potatoes cook, mash the avocados with a fork until smooth and creamy, ready to spread.
  5. Assemble the toast: Spread the mashed avocado generously between the cooked sweet potato slices. Season with a pinch of salt and pepper and drizzle the remaining olive oil over the top.
  6. Add toppings: Finish by topping with thinly sliced radishes, crushed raspberries, and optionally, microgreens and edible flowers for added color and flavor.

Notes

  • Sweet potatoes can alternatively be roasted in the oven at 425°F (220°C) for about 20 minutes if you prefer.
  • For a vegan version, this recipe is already suitable as is.
  • Add a splash of lemon juice to the mashed avocado to prevent browning and add brightness.
  • Adjust salt and pepper to taste depending on your preference.
  • Microgreens and edible flowers are optional but add great texture and visual appeal.
