Ingredients
Scale
Cheese and Bacon
- 16 ounces shredded cheese (half cheddar and half pepper jack)
- 1 tablespoon flour
- 1 pound bacon, cooked and crumbled
Egg Mixture
- 12 eggs
- 1 cup milk
- 1 & 1/2 teaspoons kosher salt (or 3/4 teaspoon table salt)
- 3/4 teaspoon black pepper
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon dry mustard
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
Instructions
- Prepare the casserole dish: Spray a 9×13 inch casserole dish with nonstick spray or grease it with butter to prevent sticking during baking.
- Layer cheese and flour: Spread the shredded cheddar and pepper jack cheese evenly in the dish, then sprinkle with 1 tablespoon of flour. Toss gently with your fingers to distribute the flour evenly over the cheese.
- Add bacon: Sprinkle the cooked and crumbled bacon evenly over the cheese layer.
- Mix egg mixture: In a large bowl, beat the 12 eggs with the milk, kosher salt, black pepper, seasoned salt, dry mustard, onion powder, garlic powder, and paprika until fully combined.
- Combine layers: Pour the seasoned egg mixture evenly over the bacon and cheese in the casserole dish.
- Optional refrigeration: Cover and refrigerate the casserole overnight to enhance flavor and texture, or proceed to bake immediately. If baking right away, do not cover the dish.
- Bake: Preheat your oven to 325°F (163°C). Bake the casserole uncovered for approximately 45 minutes, or until the center is set and the top is lightly browned.
- Rest and serve: Allow the casserole to stand for 5 minutes after baking to set before cutting and serving.
Notes
- Using kosher salt yields a more controlled salt level; if using table salt, reduce to half the amount.
- Refrigerating overnight is optional but can improve texture and flavor absorption.
- This casserole can be prepared ahead and baked fresh for convenience.
- Feel free to customize the cheese blend or add vegetables like bell peppers or onions for variation.
- Letting the casserole stand before serving helps it hold its shape when sliced.
