Description

This Baked Denver Omelet is a rich, satisfying breakfast casserole featuring tender sautéed onions and bell peppers, diced ham, and sharp cheddar cheese all combined in a fluffy baked egg base. Perfect for feeding a family or preparing ahead for a weekend brunch, this dish brings the classic Denver omelet flavors in an easy-to-share baked form.

Ingredients

Scale

Vegetables

  • ½ small onion, diced
  • ½ small green bell pepper, diced
  • ½ small red bell pepper, diced

Protein

  • 1 cup diced cooked ham
  • 8 large eggs

Dairy

  • 2 tablespoons butter
  • ¼ cup half-and-half (or whole milk)
  • ¾ cup shredded cheddar cheese

Spices

  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon coarse salt
  • ¼ teaspoon pepper

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9×9-inch or similar size baking dish to prevent sticking.
  2. Sauté Vegetables: In a large skillet, melt the butter over medium heat. Add the diced onion and bell peppers and cook for 3-4 minutes until they soften but are not browned.
  3. Add Ham: Stir the diced cooked ham into the skillet and cook for an additional 2-3 minutes to warm through. Remove from heat and set aside.
  4. Mix Eggs: In a medium bowl, whisk together the eggs, half-and-half or milk, onion powder, garlic powder, salt, and pepper until the mixture is smooth and evenly combined.
  5. Combine Mixtures: Fold the sautéed vegetables and ham mixture into the egg mixture, stirring carefully to incorporate all ingredients.
  6. Assemble in Dish: Pour the combined egg and filling mixture into the prepared baking dish in an even layer. Sprinkle the shredded cheddar cheese evenly over the top.
  7. Bake: Place the dish into the preheated oven and bake for 20-25 minutes until the eggs are fully set and the top is lightly golden brown.
  8. Cool and Serve: Remove from oven and allow to cool for a few minutes to set before slicing into portions and serving warm.

Notes

  • Using half-and-half provides a richer texture, but whole milk can be used as a lighter alternative.
  • Diced cooked ham can be substituted with cooked bacon or sausage for a different flavor.
  • Ensure the eggs are fully cooked by checking that the center is firm and the edges are slightly pulling away from the dish.
  • For added freshness, garnish with chopped green onions or parsley before serving.
  • This recipe can be prepared a day ahead and refrigerated; reheat gently before serving.
