Ingredients
Scale
Potatoes and Cheese
- 2 lbs baby potatoes, halved
- 7 oz block of feta cheese
Seasonings and Garnish
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- Juice of 1/2 lemon
- 1/4 cup chopped fresh parsley (optional, for garnish)
Instructions
- Preheat the oven: Set your oven to 400°F (200°C) and let it warm up while you prepare the ingredients.
- Prepare the potatoes: In a large baking dish, combine the halved baby potatoes with olive oil, minced garlic, dried oregano, smoked paprika, salt, and black pepper. Toss everything thoroughly to ensure the potatoes are evenly coated with the seasoning.
- Add the feta cheese: Create a space in the center of the baking dish and place the block of feta cheese right in the middle. This allows the cheese to bake evenly alongside the potatoes.
- Bake the dish: Place the baking dish in the preheated oven and bake for 35 to 40 minutes. Bake until the potatoes are golden and have crispy edges, and the feta cheese is softened and lightly browned on top.
- Add lemon juice: Remove the dish from the oven and squeeze fresh lemon juice over the potatoes and feta for a bright, tangy finish.
- Mix or serve as is: Lightly mash the baked feta into the potatoes to create a creamy texture, or leave the feta in chunks according to your preference.
- Garnish and serve: Sprinkle chopped fresh parsley over the top if desired, and serve the dish warm.
Notes
- Use baby potatoes as they cook evenly and get beautifully crispy. You can substitute with fingerling potatoes if preferred.
- If you like a stronger feta flavor, consider crumbling the block halfway through baking and mixing it with the potatoes.
- Fresh parsley adds a nice color and fresh herbal note, but you can omit or substitute with fresh dill or basil.
- This dish pairs well with a crisp green salad or roasted vegetables for a complete meal.
- For a spicier kick, add a pinch of red chili flakes with the seasonings.
