- 1 pound ground beef
- 1/2 pound ground pork
- 1/2 cup breadcrumbs
- 1/3 cup milk
- 1/4 cup finely chopped onion
- 1 large egg
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
For Topping:
- 1 cup barbecue sauce
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) and lightly grease a muffin tin.
- Mix Ingredients: In a large bowl, combine ground beef, ground pork, breadcrumbs, milk, onion, egg, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently until just combined—do not overmix.
- Shape and Bake: Divide the mixture among muffin cups, pressing lightly. Bake for 20 minutes. Spoon barbecue sauce over each mini meatloaf and bake for an additional 10 minutes until cooked through.
- Rest and Serve: Let the meatloaves rest for 5 minutes before serving. Garnish with parsley if desired.
