Bread and Toasting
- 8 slices of bread (cut 1/2” thick)
- 1 1/2 Tbsp unsalted butter (to toast the bread)
Bacon
- 12 slices bacon (regular sliced)
Vegetables
- 2 large ripe tomatoes (thickly sliced)
- 4 green lettuce leaves (rinsed and spun dry)
- 1 large avocado (or 2 small avocados, pitted, peeled and sliced)
- Salt and black pepper (to taste)
Sauce
- 1/2 cup mayonnaise
- 2 Tbsp sour cream
- 2 tsp yellow mustard
Instructions
- Prepare the Bacon: Preheat your oven to 400°F. Lay the bacon slices in a single layer on a foil-lined baking sheet. Bake for 15 to 20 minutes until the bacon is browned and crisp. Then transfer the bacon to a paper towel-lined plate to drain excess grease and cool.
- Make the Sauce: In a small bowl, combine mayonnaise, sour cream, and yellow mustard. Mix well and set aside for the flavors to marry.
- Toast the Bread: Lightly butter both sides of each bread slice. Heat a dry griddle or skillet over medium-high heat and toast the bread until golden brown on both sides.
- Assemble the Sandwich Base: Place 4 slices of toasted bread on a cutting board. Spread about 1 tablespoon of the prepared sauce on each slice. Layer each with a lettuce leaf, thick tomato slices, crispy bacon, and sliced avocado. Season the avocado with salt and black pepper to taste.
- Finish the Sandwich: Spread 1 tablespoon of sauce on the remaining toasted bread slices and place them sauce-side down on top of each assembled sandwich. Cut the sandwiches in half if desired and serve immediately.
