Description

These refreshing Blueberry Basil Popsicles combine the sweetness of blueberries and honey with the aromatic touch of fresh basil, all blended with creamy coconut milk. Perfect for a healthy, vibrant treat during warm days, these popsicles are easy to make with just a few ingredients and require no cooking.

Ingredients

Scale

Ingredients

  • 1 (14 ounce) can full fat coconut milk
  • 2 1/2 cups blueberries (frozen or fresh)
  • 1 cup fresh basil leaves
  • 1/4 cup honey (or agave syrup)

Instructions

  1. Blend Ingredients: Combine the full fat coconut milk, blueberries, fresh basil leaves, and honey in a blender. Blend on high speed until the mixture is smooth and fully combined.
  2. Freeze in Molds: Pour the blended mixture evenly into 8 popsicle molds. Place the molds in the freezer and allow them to freeze for at least 4 hours or until completely solid.

Notes

  • For a vegan option, use agave syrup instead of honey.
  • Frozen blueberries can be used directly without thawing.
  • Add a splash of lemon juice for extra brightness if desired.
  • Ensure basil is fresh for the best flavor.
  • To easily remove popsicles, run warm water on the outside of the molds for a few seconds before pulling out.
