Description

These Brownie Mix Cookies are a quick and easy treat that transforms a classic brownie mix into deliciously soft and chewy cookies. Loaded with optional chocolate chips, nuts, and colorful candies, they’re perfect for satisfying your sweet tooth with minimal effort. Ready in just 20 minutes, these cookies are ideal for a last-minute dessert or snack.

Ingredients

Scale

Dry Ingredients

  • 1 box (18–19 oz) brownie mix (fudge-style preferred)

Wet Ingredients

  • 2 large eggs
  • ¼ cup (60 ml) vegetable oil or melted butter
  • 2 tablespoons (30 ml) water

Add-Ins

  • ½ cup chocolate chips
  • ½ cup chopped walnuts or pecans
  • ½ cup M&Ms or crushed candy pieces

Finishing

  • Sea salt for sprinkling

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and allow for easy cleanup.
  2. Mix Ingredients: In a large bowl, combine the brownie mix with eggs, oil (or melted butter), and water. Stir everything together until a thick, sticky dough forms, ensuring the ingredients are fully incorporated.
  3. Add Mix-ins: Gently fold in your choice of chocolate chips, chopped nuts, and candy pieces to add texture and bursts of flavor to the cookie dough.
  4. Form Cookies: Using a spoon or cookie scoop, drop dollops of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow room for spreading.
  5. Bake Cookies: Place the baking sheet in the preheated oven and bake for 8 to 10 minutes. Look for edges to set while the centers remain soft and slightly underbaked for the best chewy texture.
  6. Cool Cookies: Remove the cookies from the oven and let them rest on the baking sheet for 5 minutes so they firm up slightly. Then transfer to a wire rack to cool completely. Optionally, sprinkle a pinch of sea salt over the warm cookies to enhance the flavors.

Notes

  • Use fudge-style brownie mix for a richer, chocolatey flavor.
  • You can substitute vegetable oil with melted butter for a more buttery taste.
  • Mix-ins like nuts, chocolate chips, and candy are optional but add texture and variety.
  • Do not overbake; cookies should be soft in the center when removed from the oven.
  • Sprinkling sea salt on top balances the sweetness perfectly.
  • Store cookies in an airtight container at room temperature for up to 5 days.
