Description

This Cheddar-Crusted Ground Beef and Rice Casserole is a comforting and flavorful dish that is perfect for a family dinner. With layers of seasoned ground beef, rice, vegetables, and a creamy cheese topping, this casserole is sure to be a hit.

Ground Beef Mixture:

  • 1 pound ground beef, 90% lean
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots, thawed
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil

Additional Ingredients:

  • 1 cup uncooked long-grain white rice
  • 2 cups shredded sharp cheddar cheese, divided
  • cooking spray or butter for greasing the baking dish


Instructions

  1. Preheat the Oven: Preheat your oven to 375°F and grease a 9×13-inch baking dish.
  2. Sauté Onion and Garlic: In a skillet, sauté diced onion in olive oil until soft. Add minced garlic and cook briefly.
  3. Cook Ground Beef: Add ground beef to the skillet and cook until browned. Drain excess grease if needed.
  4. Combine Ingredients: Stir in rice, peas, carrots, soup, sour cream, milk, seasonings, and 1 cup of cheddar cheese.
  5. Transfer to Baking Dish: Spread the mixture in the baking dish and top with remaining cheddar cheese.
  6. Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for additional 10-15 minutes until golden and bubbly.
  7. Rest and Serve: Let the casserole rest for 5 minutes before serving.

Notes

  • You can substitute ground turkey or chicken for the beef.
  • For added crunch, top with crushed Ritz crackers or fried onions during the last 10 minutes of baking.
  • Brown rice can be used, but adjust the cook time accordingly.
