- 1 small onion (finely chopped)
- 2 garlic cloves (minced)
- 1 pound ground beef
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 (24-ounce) jar marinara sauce
- 1/2 cup grated Parmesan cheese

- 1 1/2 cups shredded mozzarella cheese
- 1 cup ricotta cheese
- 2 tablespoons chopped fresh parsley (plus more for garnish)

Instructions
- Preheat the Oven: Preheat the oven to 375°F.
- Sauté Onion and Garlic: Heat olive oil in a skillet, cook onion until soft, then add garlic and cook.
- Cook Beef: Add ground beef, cook until browned, season with oregano, salt, pepper, and red pepper flakes.
- Add Sauce: Pour in marinara sauce, simmer for 5-7 minutes.
- Prepare Cheese Filling: Mix ricotta, half of Parmesan, half of mozzarella, and parsley.
- Assemble Roll-Ups: Spread cheese mixture on noodles, top with meat sauce, roll up, place in baking dish.
- Bake: Cover with foil, bake for 20 minutes, then uncover and bake for 10 more minutes until golden.
- Serve: Garnish with parsley before serving.
Notes
- You can prepare this dish ahead and refrigerate it unbaked for up to 24 hours.
- Substitute ground turkey for beef if desired.
- For added flavor, consider adding a splash of red wine to the sauce.
