Description

This Cheesy Buffalo Chicken Dip is a flavorful and creamy appetizer perfect for gatherings and game days. Made with shredded rotisserie chicken, spicy Frank’s Hot Sauce, mayo, melted cheese, and tangy blue cheese, this hot dip is baked until bubbly and served with a variety of chips for dipping.

Ingredients

Scale

Chicken Mixture

  • 2 cups cooked rotisserie chicken, shredded
  • 1/3 cup Frank’s Hot Sauce
  • 1 cup mayonnaise
  • 1 cup shredded cheese (Mexican blend recommended)
  • 1/2 teaspoon lemon juice
  • 3 tablespoons green onions, finely chopped

Topping

  • 1/3 cup crumbled blue cheese

For Serving

  • Additional chopped green onions for garnish
  • Crackers, tortilla chips, or pita chips

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the dip.
  2. Mix Chicken and Sauce: In a medium bowl, combine the shredded rotisserie chicken with Frank’s Hot Sauce, tossing well to coat the chicken evenly with the spicy sauce.
  3. Add Remaining Ingredients: Stir in the mayonnaise, shredded cheese, lemon juice, and finely chopped green onions to the chicken mixture until fully blended and creamy.
  4. Prepare Baking Dish: Spread the prepared chicken mixture evenly into a 1 and 1/2 quart shallow dish, such as a pie plate, and sprinkle the top with crumbled blue cheese for added flavor.
  5. Bake: Place the dish in the oven and bake uncovered for about 20 minutes, or until the dip is bubbly and heated through.
  6. Serve: Garnish with additional chopped green onions and serve warm with crackers, tortilla chips, or pita chips for dipping.

Notes

  • Use rotisserie chicken for convenience and added flavor; you can also cook and shred your own chicken breasts.
  • Frank’s Hot Sauce is recommended for its classic buffalo flavor, but you can substitute with your preferred hot sauce.
  • For a milder dip, reduce the amount of hot sauce.
  • This dip can be prepared in advance and baked just before serving.
  • Leftovers can be refrigerated and reheated in the oven or microwave.
