Chicken Muffins:

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a 12-cup muffin tin with liners or greasing.
  2. Mix wet ingredients: In a large bowl, whisk together eggs, milk, and olive oil until smooth. Stir in zucchini, chicken, and cheddar cheese.
  3. Combine dry ingredients: In a separate bowl, mix flour, baking powder, baking soda, garlic powder, onion powder, salt, and pepper. Gradually add this to the wet mixture.
  4. Bake: Spoon the batter into muffin cups and bake for 20–25 minutes until golden and a toothpick comes out clean. Cool before serving.
