- 2 tablespoons olive oil, divided
- 2 tablespoons fajita seasoning
- 3 boneless, skinless chicken breasts, cut into long strips
- 1 medium red bell pepper, cut into long strips
- 1 medium green bell pepper, cut into long strips
- 2 large onions, sliced
Quesadillas
- 2 tablespoons butter
- 1 cup shredded Tex-Mex cheese or cheddar cheese
- 8 tortillas (flour or corn)

Instructions
- Season and Cook Chicken: Season chicken strips with 1 tablespoon fajita seasoning. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook chicken strips until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and wipe skillet clean.
- Sauté Vegetables: Heat remaining 1 tablespoon olive oil in the same skillet. Sauté sliced onions over medium heat until softened, about 4-5 minutes. Add bell peppers and the remaining 1 tablespoon fajita seasoning. Cook until peppers are slightly softened, about 4-5 minutes. Return cooked chicken to skillet and toss with vegetables for 1 minute to combine flavors.
- Assemble and Cook Quesadillas: In a separate skillet, melt butter over medium heat. Place one tortilla in the skillet and cook until lightly browned, about 1-2 minutes. Flip the tortilla and quickly top the cooked side with a portion of the chicken and vegetable mixture, then sprinkle with shredded cheese. Top with another tortilla and cook for 2-3 minutes per side, pressing gently and flipping carefully, until both sides are golden brown and cheese is melted. Repeat this process with remaining tortillas and filling.
- Serve: Remove quesadillas from skillet and cut each into quarters. Serve warm with salsa and sour cream on the side for dipping.
