Layering:
- 8 small corn tortillas (cut into quarters)
- 2 cups shredded Mexican blend cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Sauté vegetables: In a large skillet, heat olive oil over medium heat. Sauté onion and bell pepper until softened.
- Combine ingredients: Stir in shredded chicken, diced tomatoes, black beans, corn, and taco seasoning. Cook until heated through.
- Layer casserole: Grease a baking dish, layer tortillas, chicken mixture, and cheese. Repeat layers.
- Bake: Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is melted.
