Description

These Chocolate Frozen Raspberries are a delightful and refreshing treat, combining the natural tartness of fresh raspberries with the creamy richness of chocolate. Perfect for a healthy dessert or snack, they are coated in both white and dark chocolate to offer a contrast in flavors and colors. Easy to make and perfect for summer refreshment.

Ingredients

Scale

Raspberries

  • 28 fresh raspberries

Chocolate Coating

  • 1/3 cup vanilla yogurt (e.g., Siggi’s 4%)
  • 1/2 cup dark chocolate chips (e.g., Lily’s dark chocolate chips)
  • 1/2 cup white chocolate chips (e.g., Lily’s white chocolate chips)
  • 2 tsp coconut oil
  • 4 tsp coconut oil, divided

Instructions

  1. Prepare the Raspberries: Rinse the fresh raspberries gently and pat them dry with a paper towel. Set aside to maintain firmness while preparing the chocolate coatings.
  2. Melt the Dark Chocolate Mixture: In a microwave-safe bowl, combine 1/2 cup dark chocolate chips and 2 teaspoons coconut oil. Microwave in 20-second intervals, stirring well after each, until the mixture is smooth and fully melted.
  3. Dip Raspberries in Dark Chocolate: Hold each raspberry by the top and dip it carefully into the melted dark chocolate mixture, coating it well. Place coated raspberries on a parchment-lined tray.
  4. Melt the White Chocolate Mixture: In another microwave-safe bowl, combine 1/2 cup white chocolate chips and 2 teaspoons coconut oil. Follow the same microwaving process as the dark chocolate until smooth.
  5. Coat Remaining Raspberries with White Chocolate: Dip the remaining raspberries into the melted white chocolate mixture, ensuring full coverage. Place them on the parchment-lined tray alongside the dark chocolate-coated ones.
  6. Chill and Set: Place the tray in the freezer and allow the raspberries to freeze for at least 1 hour to set the chocolate coating and keep the berries firm and refreshing.
  7. Serve: Enjoy these chocolate frozen raspberries as a cool, sweet snack or dessert. Keep leftovers stored in the freezer for up to a week.

Notes

  • Use fresh, firm raspberries to ensure best results and prevent sogginess.
  • Choose high-quality chocolate chips for richer flavor and smoother coating.
  • Store the finished raspberries in an airtight container in the freezer to maintain freshness.
  • Variations: You can use flavored yogurt such as vanilla or berry for added taste or try dipping in milk chocolate if preferred.
  • For a dairy-free option, substitute the yogurt and chocolate chips with plant-based alternatives.
