Description
These rich and creamy fudge popsicles combine silky chocolate with a touch of vanilla and sea salt for a decadent frozen treat that’s perfect for warm days. Made with milk, heavy cream, and real chocolate, they deliver a smooth, fudgy texture that’s easy to blend and freeze.
Ingredients
Scale
Dairy
- 2 cups milk
- 3/4 cup heavy cream
Chocolate
- 2 tablespoons unsweetened cocoa powder
- 3/4 cup semi-sweet chocolate chips
Other
- 1/4 cup granulated sugar
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon fine sea salt
Instructions
- Heat the dairy and cocoa mixture. In a large saucepan, combine the milk, heavy cream, granulated sugar, and unsweetened cocoa powder. Heat over medium heat until the mixture reaches a simmer, stirring occasionally to fully dissolve the sugar and cocoa. Remove the pan from the heat once simmering.
- Melt chocolate and blend. Pour the hot dairy mixture over the semi-sweet chocolate chips in a blender. Allow it to sit for a few minutes to let the chocolate soften, then add vanilla extract and sea salt. Blend on medium speed until the mixture is completely smooth and glossy.
- Freeze the mixture in molds. Pour the blended fudge mixture into ice pop molds. Place the molds in the freezer for about 30 minutes before inserting popsicle sticks. This short freeze time gives the mixture enough firmness to hold the sticks upright.
- Freeze overnight. After placing the sticks, freeze the popsicles overnight or for at least 6 hours until they are fully solid and frozen through.
- Serve the popsicles. To easily remove the popsicles from the molds, briefly run warm water over the outside of the molds. This loosens the edges and allows the fudge popsicles to slide out cleanly, ready to enjoy.
Notes
- Use whole milk and heavy cream for the creamiest texture; lower-fat milk options will yield less rich popsicles.
- Be sure to let the hot mixture sit on the chocolate chips before blending to ensure smooth melting.
- For extra fudgy popsicles, add a tablespoon of sweetened condensed milk during blending.
- Store leftover popsicles in an airtight container in the freezer for up to one week for best flavor and texture.
