Instructions

  1. Combine Dry Ingredients: In a food processor, pulse the almond meal/flour and powdered sugar until they are fully mixed and uniform in texture.
  2. Add Wet Ingredients and Form Dough: Add the egg white, almond extract, and rose water to the food processor and process until a cohesive ball of marzipan dough forms.
  3. Knead and Divide: Remove the marzipan dough onto your work surface and knead it a few times. If sticky, add more powdered sugar as needed. Divide the dough into three equal balls for coloring.
  4. Color the Dough: Place two balls each into separate small bowls. Add red gel food coloring to one bowl and green gel food coloring to the other. Stir thoroughly until the color is evenly incorporated, adding icing sugar if necessary to reduce stickiness, then form each colored marzipan into balls again.
  5. Shape the Marzipan: Roll out each ball individually, cut out festive shapes with cookie cutters, and repeat the process until all the marzipan is used.
  6. Store Properly: Keep the marzipan in a sealed container in the fridge. If the egg whites are fresh, it will last at least a week or even a few weeks.
