Salmon Fillets:

  • 4 salmon fillets (about 6 oz each), skin removed

Seafood Stuffing:

  • 1/2 cup lump crab meat, picked over for shells

  • 2 tablespoons mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup panko breadcrumbs
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Old Bay seasoning
  • 1 tablespoon chopped fresh parsley
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare stuffing: In a medium bowl, mix crab meat, shrimp, cream cheese, mayonnaise, Parmesan, panko, lemon juice, Old Bay seasoning, parsley, and garlic.
  3. Prepare salmon: Cut a pocket in each salmon fillet, season with salt and pepper, then stuff with seafood mixture.
  4. Bake: Place stuffed fillets on the baking sheet, drizzle with olive oil, and bake for 18–22 minutes until cooked through.
  5. Serve: Garnish with parsley or lemon wedges and serve hot.
