Dry Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon

Wet Ingredients:

  • ½ cup unsalted butter (softened)
  • 8 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas (mashed)
  • ½ cup chopped walnuts or pecans (optional)


Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. Prepare Wet Mixture: In a large bowl, beat the butter and cream cheese until smooth. Add sugar and beat until fluffy. Mix in eggs one at a time, then add vanilla.
  4. Combine and Bake: Stir in mashed bananas, then gradually add dry ingredients. Fold in nuts if desired. Pour batter into pan, bake for 60–70 minutes until a toothpick comes out clean. Cool before slicing.

Notes

  • For extra banana flavor, use very ripe bananas with lots of brown spots.
  • You can also add chocolate chips or a cinnamon sugar topping for variation.
