Ingredients

Scale

Pork Chops and Seasonings

  • 1.5 pounds Boneless pork loin chops
  • Salt and Pepper, to taste
  • 1 Teaspoon Onion Powder
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Dried Sage

Cooking Fats

  • 2 Tablespoons Butter (divided)
  • 2 Tablespoons Olive Oil

Mushroom Gravy

  • 8 ounces Bella Mushrooms, sliced
  • 2 (10.5 ounce) cans Cream of Mushroom Soup
  • 1/2 cup Chicken broth

Garnish

  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare Pork Chops: Remove pork chops from the refrigerator about 20 minutes before cooking to bring them to room temperature for even cooking.
  2. Dry and Season: Pat the pork chops dry with a paper towel. Season both sides generously with salt, pepper, garlic powder, onion powder, and dried sage.
  3. Heat Skillet: Place a cast iron skillet over medium heat and let it heat thoroughly.
  4. Add Fats: Add 1 tablespoon of butter and the olive oil to the hot skillet, allowing the butter to melt completely.
  5. Sear Pork Chops: Add the pork chops to the skillet and cook undisturbed until golden brown on one side and they easily release from the pan, about 4-5 minutes. Flip and cook the other side similarly until the internal temperature reaches 145°F.
  6. Set Aside Pork: Remove the cooked pork chops from the skillet and place on a plate, setting them aside while you prepare the sauce.
  7. Cook Mushrooms: Add the remaining tablespoon of butter to the skillet. Once melted, spread the sliced mushrooms in a single layer and cook until browned on both sides. Remove mushrooms to a plate once browned.
  8. Make Gravy: Turn heat to medium-low. Pour in the chicken broth and cream of mushroom soup, whisking together until combined and bubbling. Taste and adjust seasoning with salt and pepper as needed.
  9. Combine Mushrooms and Sauce: Return the browned mushrooms to the gravy and stir to incorporate.
  10. Heat Pork Chops in Sauce: Nestle the pork chops back into the skillet with the mushroom gravy and allow everything to heat through together for a few minutes.
  11. Serve: Serve the pork chops topped with creamy mushroom gravy immediately. This dish pairs beautifully with mashed potatoes, rice, noodles, or your favorite vegetables for a complete meal.

Notes

  • Allowing the pork chops to rest at room temperature before cooking ensures even cooking.
  • Using a cast iron skillet helps achieve a great sear and even heat distribution.
  • Check the internal temperature of pork with a meat thermometer to ensure food safety and juiciness (145°F).
  • The mushroom gravy can be customized with fresh herbs or additional seasoning to taste.
  • Serve with hearty sides like mashed potatoes or rice for a comforting meal.
