Ingredients

Orzo Pasta:

1 cup dry orzo pasta

Cottage Cheese Mixture:

1 cup cottage cheese (full-fat or low-fat), 1 tablespoon olive oil, 2 cloves garlic (minced), 1/4 cup grated Parmesan cheese, 1/2 cup milk (whole or 2%), 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1 teaspoon lemon juice, 1/4 teaspoon crushed red pepper flakes (optional)

Optional Additions:

2 tablespoons chopped fresh parsley, 1 cup baby spinach or chopped kale


Instructions

  1. Cook the Orzo: Cook the orzo in a pot of salted boiling water until al dente, then drain and set aside.
