Description

Delight your guests with these elegant and creamy cucumber tea sandwiches. Perfect for afternoon tea or as a light appetizer, these sandwiches are filled with a flavorful cream cheese mixture and fresh cucumbers, all nestled between soft bread slices.

Ingredients

Scale

Cream Cheese Filling:

  • 8 ounces cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Additional:

  • 1 English cucumber, thinly sliced and patted dry
  • 12 slices of soft white or whole wheat sandwich bread, crusts removed

Instructions

  1. Mix Cream Cheese Filling: In a medium bowl, combine softened cream cheese, mayonnaise, dill, chives, lemon juice, garlic powder, salt, and black pepper until smooth.
  2. Assemble Sandwiches: Spread a generous layer of the cream cheese mixture on each slice of bread. Place cucumber slices on half of the bread slices. Top with remaining bread slices to form sandwiches.
  3. Serve: Press gently and slice sandwiches into quarters or halves. Serve immediately or chill briefly for optimal flavor.

Notes

  • For added flavor, consider a pinch of onion powder or a light layer of butter before spreading the filling.
  • Best served fresh; can be made a few hours ahead and refrigerated tightly wrapped in plastic.
