- Cook the beef and onions: In a skillet over medium heat, cook ground beef together with diced onions until beef is browned and onions are soft. Drain any excess fat from the skillet.
- Make the filling: Remove the skillet from heat and stir in shredded cheddar cheese, chopped pickles, ketchup, mustard, garlic powder, salt, and pepper to combine evenly.
- Prepare the egg roll wrappers: Lay one egg roll wrapper flat on a clean surface. Spoon about 2-3 tablespoons of the beef mixture near one corner of the wrapper.
- Roll the egg rolls: Fold in the sides of the wrapper, then roll tightly from the corner with filling to the opposite edge, using a little water to seal the edge and secure the roll.
- Repeat: Repeat the filling and rolling process with the remaining wrappers and beef mixture.
- Heat the oil: In a deep skillet or fryer, heat vegetable oil to 350°F (175°C) for frying.
- Fry the egg rolls: Fry the egg rolls in batches for 3-4 minutes each, or until they are golden brown and crispy on all sides.
