Description

Hearty and flavorful Crockpot Chili made with ground beef, beans, tomatoes, and a blend of spices. This easy slow-cooker recipe allows the flavors to meld together for a comforting meal perfect for any day of the week.

Ingredients

Scale

Main Ingredients

  • 1 lb ground beef (or ground turkey for a leaner option)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes
  • 1 (6 oz) can tomato paste
  • 1 (4 oz) can diced green chilies (optional, for extra heat)
  • 1 cup beef broth (or chicken broth for a lighter flavor)

Spices & Seasonings

  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper (adjust to taste)
  • 1/4 tsp cayenne pepper (optional, for extra heat)

Instructions

  1. Cook the Beef: In a skillet over medium heat, cook the ground beef (or turkey) with the chopped onion and minced garlic until the beef is browned and fully cooked. Drain any excess fat to reduce grease in the final dish.
  2. Transfer to Crockpot: Place the cooked beef mixture into the crockpot to prepare for slow cooking.
  3. Add Remaining Ingredients: Add the drained kidney beans, black beans, diced tomatoes, tomato paste, diced green chilies (if using), beef broth, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne pepper into the crockpot with the beef.
  4. Mix and Cook: Stir all ingredients together to combine evenly. Cover the crockpot with its lid.
  5. Slow Cook: Cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chili is thickened and flavors are well blended.

Notes

  • For a leaner dish, substitute ground turkey instead of ground beef.
  • Adjust the amount of chili powder and cayenne pepper to your spicy preference.
  • Drain excess fat after browning the meat to keep the chili from becoming greasy.
  • Serve with toppings like shredded cheese, sour cream, or chopped green onions if desired.
  • This recipe freezes well for easy meal prep.
