Cinnamon Roll Monkey Bread:

  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/4 cup packed light brown sugar
  • Nonstick cooking spray


Instructions

  1. Prepare the Crockpot: Spray the inside of a 6-quart crockpot with nonstick cooking spray.
  2. Prep the Cinnamon Rolls: Cut each cinnamon roll into quarters. In a zip-top bag, combine granulated sugar and cinnamon. Add the cinnamon roll pieces, seal the bag, and shake until coated.
  3. Mix Butter and Brown Sugar: In a small bowl, mix melted butter and brown sugar.
  4. Layer in the Crockpot: Place half of the coated cinnamon roll pieces in the crockpot. Drizzle half of the butter mixture over them. Repeat with the remaining pieces and butter mixture.
  5. Cook: Cover and cook on low for 2 to 2.5 hours until the dough is cooked and golden.
  6. Serve: Let it cool slightly, then drizzle with reserved icing before serving.

Notes

  • For extra richness, add chopped pecans or walnuts between layers.
  • Enhance the flavor by adding a splash of vanilla extract to the butter mixture.
