Description

Crockpot Crack Chicken is a creamy, flavorful slow-cooked chicken dish infused with ranch seasoning, cream cheese, bacon, cheddar cheese, and green onions. This easy-to-make recipe is perfect for a comforting dinner with minimal effort, allowing the slow cooker to do all the work while delivering tender, shredded chicken with a rich, cheesy sauce.

Ingredients

Scale

Chicken and Seasoning

  • 2 pounds boneless skinless chicken thighs
  • 1 ounce packet ranch seasoning mix

Dairy and Cheese

  • 16 ounces cream cheese
  • 1 1/2 cups shredded cheddar cheese

Other Ingredients

  • 8 slices bacon, cooked and chopped
  • 2 green onions, chopped

Instructions

  1. Prepare the Chicken: Place the chicken thighs in an even layer in the bottom of the slow cooker. Sprinkle the ranch seasoning mix evenly over the chicken, then add the cream cheese on top in chunks or dollops to allow it to melt evenly.
  2. Slow Cook the Chicken: Cover the slow cooker with the lid and set it to low heat. Cook for about 6 hours until the chicken is fork-tender and easily shredded.
  3. Shred and Combine: Using two forks, shred the chicken directly in the slow cooker. Stir thoroughly to mix the shredded chicken with the melted cream cheese, creating a creamy base.
  4. Add Bacon and Onions: Mix in the chopped cooked bacon and chopped green onions to distribute their flavors evenly throughout the dish.
  5. Melt the Cheese: Sprinkle the shredded cheddar cheese over the top of the chicken mixture. Cover the slow cooker again and cook for an additional 15 to 20 minutes on low, or until the cheese is completely melted and bubbly.

Notes

  • For a lower-fat version, substitute cream cheese with reduced-fat cream cheese and use turkey bacon.
  • Serve with crackers, on a sandwich bun, or with vegetables for a complete meal.
  • This dish keeps well in the refrigerator for up to 3 days and can be reheated gently on the stovetop or microwave.
  • You can add a pinch of black pepper or garlic powder to enhance the seasoning if desired.
  • If you prefer a thicker sauce, remove the lid during the last 15 minutes to allow some liquid to evaporate.
