Instructions

  1. Prepare the Fig Filling: Start by combining the dried figs and water in a small saucepan. Simmer gently over low heat until the figs have softened and absorbed the water, about 10-15 minutes. Then, mash the figs into a chunky jam-like consistency. Add 1-2 tablespoons of sugar if desired to enhance sweetness, along with 1 teaspoon of fresh lemon juice to brighten the flavor. Set aside and let cool.
  2. Make the Crust: In a medium bowl, whisk together the all-purpose flour, brown sugar, and salt. Cut in the cold, diced unsalted butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Reserve about 1/3 of this mixture for the topping later.
  3. Form the Base: Press the remaining crumb mixture firmly and evenly into the bottom of a greased 8×8 inch baking pan to form the crust. Make sure it’s compact to support the filling layers.
