Ingredients
Scale
Broth and Aromatics
- 2 tablespoons extra virgin olive oil
- 1 ½ cups white onion, diced
- ¼ cup ginger, minced
- 6 cloves garlic, minced
- 8 cups vegan chicken or vegetable broth
Filling
- 14 oz vegan ground sausage
Vegetables and Garnish
- 3-4 baby bok choy, chopped
- Wonton wrappers, for garnish
- Green onions, sliced, for serving
- Chili oil, for serving
Instructions
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Sauté the diced onions, minced ginger, and garlic for 5-6 minutes until fragrant and softened, which helps build a flavorful base for the broth.
- Add Broth Ingredients and Simmer: Pour in the vegan chicken or vegetable broth and bring it to a boil. Lower the heat to a simmer and cover partially, allowing it to cook for 30 minutes to develop depth in flavor.
- Strain Broth: Strain the broth through a fine-mesh sieve to remove the solids and return the clear, flavorful liquid back to the pot over heat.
- Prepare Filling: In a mixing bowl, combine the vegan ground sausage thoroughly, ensuring it is well mixed and ready to form into small filling balls.
- Cook Wonton Filling Balls: Form teaspoon-sized balls from the sausage mixture. Drop them gently into the simmering broth and cook for about 15 minutes, allowing them to cook through and infuse the broth with flavor.
- Add Baby Bok Choy: Stir in the chopped baby bok choy and simmer until tender, about 2-3 minutes, to add a fresh, green crunch to the soup.
- Add Wonton Wrappers: Add wonton wrappers one at a time, stirring gently to avoid sticking. Let them simmer for a few more minutes until softened but still slightly chewy, adding texture and a nod to traditional wontons.
- Serve: Ladle the soup into bowls and garnish with sliced green onions and a drizzle of chili oil for a finishing touch of spice and flavor. Serve hot.
Notes
- You can substitute vegan chicken broth with vegetable broth if preferred.
- For an extra umami boost, add a splash of soy sauce or tamari to the broth during simmering.
- If you want crisper wonton garnishes, deep fry the wonton wrappers until golden and drain on paper towels before serving.
- Adjust the amount of chili oil according to your spice tolerance.
- For gluten-free, use gluten-free wonton wrappers or omit them and serve with extra veggies.
