Marinade:

  • 1 ½ pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon salt

Butter Chicken:

  • 3 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon tomato paste
  • 1 cup tomato puree (or canned crushed tomatoes)
  • ½ cup heavy cream
  • ½ cup water
  • fresh cilantro, chopped (for garnish)


Instructions

  1. Marinate the Chicken: In a large bowl, mix yogurt, lemon juice, spices, and salt. Add chicken, coat evenly, cover, and marinate.
  2. Cook Butter Chicken: Melt butter in a skillet, sauté onion, add garlic, ginger, tomato paste, then chicken. Cook, add tomato puree, simmer, stir in cream, and simmer more. Adjust seasoning, garnish, and serve.

Notes

  • For a lighter version, use coconut milk or half-and-half instead of heavy cream.
  • Thighs are recommended for more tender and flavorful results.
