Marinade:
- 1 ½ pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 teaspoon salt
Butter Chicken:
- 3 tablespoons unsalted butter
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon tomato paste
- 1 cup tomato puree (or canned crushed tomatoes)
- ½ cup heavy cream
- ½ cup water
- fresh cilantro, chopped (for garnish)
Instructions
- Marinate the Chicken: In a large bowl, mix yogurt, lemon juice, spices, and salt. Add chicken, coat evenly, cover, and marinate.
- Cook Butter Chicken: Melt butter in a skillet, sauté onion, add garlic, ginger, tomato paste, then chicken. Cook, add tomato puree, simmer, stir in cream, and simmer more. Adjust seasoning, garnish, and serve.
Notes
- For a lighter version, use coconut milk or half-and-half instead of heavy cream.
- Thighs are recommended for more tender and flavorful results.
