Pie:
- 1 pre-baked 9-inch pie crust
Gelatin Glaze:
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 1 cup water
- 1 (3-ounce) package strawberry gelatin (such as Jell-O)
Filling:
- 1 quart fresh strawberries, hulled and halved
Instructions
- In a medium saucepan, whisk together the sugar and cornstarch. Gradually stir in the water and cook over medium heat, stirring constantly until the mixture thickens and becomes translucent, about 5–7 minutes.
- Remove from heat and stir in the strawberry gelatin until fully dissolved. Set aside to cool to room temperature.
- Arrange the halved strawberries in the baked pie crust. Pour the cooled gelatin mixture evenly over the strawberries.
- Refrigerate for at least 4 hours or until fully set.
- Serve chilled with whipped cream if desired.
