- 2/3 cup heavy cream (160ml)
- 1/2 cup milk (120ml)
- 2 cups chopped baby spinach
- 1/4 cup grated parmesan (25g)
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- Black pepper to taste
- 6 oz feta cheese (coarsely crumbled, 170g)
- 1/2 pound cherry tomatoes (on the vine if available, 250g)
- 1 teaspoon olive oil
Instructions
- Prepare the crust: Preheat your oven to 375°F (190°C). Roll out the puff pastry to fit a 9-inch pie dish, allowing it to hang over the edges slightly. Gently press the pastry into the dish, trimming any excess hanging over the rim. Prick the base with a fork to prevent puffing.
- Sauté spinach and tomatoes: Heat 1 teaspoon olive oil in a skillet over medium heat. Add the chopped baby spinach and cook until wilted, about 2-3 minutes. Remove from heat. Halve or leave cherry tomatoes whole depending on preference.
- Mix the filling: In a large bowl, whisk together the 5 eggs, heavy cream, milk, grated parmesan, dried oregano, salt, and black pepper until smooth. Stir in the sautéed spinach and crumbled feta cheese.
- Assemble the quiche: Pour the egg and spinach mixture into the prepared puff pastry crust. Evenly distribute the cherry tomatoes on top, gently pressing them slightly into the filling.
- Bake the quiche: Place the quiche on the middle rack of the preheated oven. Bake for 70-75 minutes or until the filling is set and the top is golden brown. A knife inserted into the center should come out clean.
- Cool and serve: Allow the quiche to cool for 10-15 minutes before slicing. This helps the filling set further and makes serving easier. Enjoy warm or at room temperature.
