  • 1 (14 ounce) can red kidney beans, drained
  • 2 (10.5 ounce) cans Rotel Diced Tomatoes & Green Chilies (with juices)
  • 1/2 cup water or chicken broth
  • Salt & pepper to taste

Instructions

  1. Sauté Onions: Heat olive oil in a Dutch oven or large soup pot over medium-high heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent.
  2. Cook Turkey: Add the ground turkey to the pot. Cook for 5 minutes, breaking it up with a spoon as it browns evenly.
  3. Add Spices and Tomato Paste: Stir in tomato paste, Worcestershire sauce, chili powder, garlic powder, cumin, smoked paprika, and cayenne pepper until well combined with the turkey.
  4. Add Beans and Tomatoes: Mix in the drained kidney beans, Rotel diced tomatoes with green chilies (including juices), and water or chicken broth. Increase heat to high to bring to a gentle boil.
  5. Simmer Chili: Reduce heat to low and simmer the chili for 15-20 minutes with the lid slightly ajar, stirring occasionally to prevent sticking.
  6. Prepare Toppings: While the chili simmers, prepare your desired toppings such as shredded cheese, sour cream, cilantro, or avocado.
