Peach Filling

Biscuit Topping
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, cold and cubed
- 1/4 cup boiling water
Topping Sprinkle
- 3 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Prepare the Peach Filling: Preheat your oven to 425°F (218°C). In a large bowl, combine sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix well to coat the peaches evenly.
- Transfer Filling: Pour the peach mixture into a 9×13 inch baking dish, spreading it out evenly.
- Prepare the Biscuit Topping: In a medium bowl, mix together all-purpose flour, granulated sugar, brown sugar, baking powder, and salt. Using a pastry cutter or two forks, cut in the cold, cubed butter until the mixture resembles coarse crumbs.
- Combine Topping: Stir in the boiling water just until combined to form the biscuit dough.
- Assemble Cobbler: Drop spoonfuls of the biscuit topping evenly over the peach filling in the baking dish.
- Add Sprinkle Topping: In a small bowl, mix granulated sugar and ground cinnamon, then sprinkle evenly over the biscuit topping.
