These Frozen Yogurt Granola Cups are a delightful no-bake treat combining a crunchy granola base with creamy Greek yogurt and fresh berries. Perfect for a healthy snack or light dessert, they are easy to prepare and can be customized with your favorite toppings.
Ingredients
Scale
Granola Base
- 3/4 cup oats
- 1/2 tsp cinnamon
- 1/4 cup almond butter
- 3-4 tbsp honey (adjust to desired sweetness)
- 1 tsp vanilla extract
Filling and Topping
- 1 1/2 cups Greek yogurt
- Berries of choice to top
Instructions
- Prepare Granola Mixture: In a bowl, combine oats, cinnamon, almond butter, honey, and vanilla extract. Mix thoroughly until you achieve a sticky dough. If the mixture feels too dry, add a bit more almond butter and honey until it holds together well.
- Form Granola Base: Line a muffin pan with muffin liners. Spoon a portion of the granola dough into the bottom of each muffin cup and press firmly with your fingers to create a sturdy base layer that will hold the toppings.
- Add Yogurt and Toppings: Spoon a generous amount of Greek yogurt into each granola base cup. Top with fresh berries and sprinkle any leftover granola dough on top for extra texture and crunch.
- Freeze the Cups: Place the muffin pan in the freezer for at least 4 hours or until the cups are fully set and firm, ensuring they hold their shape when served.
- Serve: Remove the frozen yogurt granola cups from the freezer. Let them thaw slightly for a couple of minutes to soften, making them easier to eat and enjoy this refreshing, healthy snack.
Notes
- You can substitute almond butter with peanut butter or any nut/seed butter of preference.
- Adjust the amount of honey to your preferred level of sweetness or use maple syrup for a vegan alternative.
- Use any berries you like such as strawberries, blueberries, or raspberries for topping.
- Make sure to press the granola base firmly to prevent crumbling when eating.
- The cups can be stored in the freezer for up to a week for a quick grab-and-go snack.
