Instructions

  1. Prepare the syrup: Combine the cane sugar, freshly squeezed lime juice, minced ginger, and diced lemongrass in a small pot over medium-high heat. Stir constantly and bring the mixture to a boil, then remove from heat immediately once boiled to preserve the fresh flavors.
  2. Puree the syrup: Transfer the hot sugar-ginger-lemongrass mixture to a blender or food processor and pulse until smooth and well combined into a syrup.
  3. Strain the syrup: Using a fine-mesh sieve, strain the pureed mixture into a bowl or container, capturing the clear liquid and discarding the solids for a smooth syrup.
  4. Prepare the glasses: Rim two rocks glasses with salt by moistening the rims and dipping them into salt. Fill the glasses with crushed ice to chill.
