Ingredients
Scale
Vegetables and Dairy
- 2 tablespoons unsalted butter
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 3 cups frozen green beans, thawed
- 1 1/2 cups shredded cheddar cheese, divided
- 1/2 cup whole milk
Soup and Seasonings
- 10.5 oz can cream of mushroom soup
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
Other
- 26 oz bag frozen tater tots
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Sauté Aromatics: In a large skillet over medium heat, melt the unsalted butter. Add the finely chopped yellow onion and sauté until soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.
- Make the Sauce: Stir in the cream of mushroom soup, whole milk, salt, black pepper, and garlic powder into the skillet. Mix well to combine all ingredients into a creamy sauce.
- Add Green Beans and Cheese: Fold the thawed green beans and 1 cup of shredded cheddar cheese into the sauce mixture until everything is evenly coated.
- Assemble Casserole: Transfer the green bean mixture into a greased 9×13-inch baking dish, spreading it out evenly. Arrange the frozen tater tots in a single layer on top of the green bean mixture.
- Bake: Place the casserole in the preheated oven and bake for 35 to 40 minutes, or until the tater tots are golden brown and crispy.
- Add Cheese Topping: Remove the casserole from the oven and sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top. Return it to the oven and bake for an additional 5 minutes until the cheese is melted and bubbly.
- Rest and Serve: Let the casserole sit for 5 minutes before serving to allow it to set slightly for easier serving and enhanced flavors.
Notes
- For extra flavor, add a dash of Worcestershire sauce to the mushroom sauce.
- Swap cheddar cheese with a blend of cheddar and Monterey Jack for a richer taste.
- Add sautéed mushrooms into the green bean mixture for additional texture and earthiness.
