Ingredients
Scale
Meat
- 1 pound Ground Sirloin (cooked and crumbled)
Vegetables
- 1 large yellow onion (chopped)
- 4 large white potatoes (peeled and diced)
- 4 large carrots (peeled and sliced)
- 1 Tablespoon Garlic (minced)
- 1/2 package Frozen Peas
Liquids and Broth
- 4 cups Chicken Broth
- Water (enough to cover ingredients about 3 inches)
Condiments and Seasonings
- 1 (6-8 ounce) can Tomato Paste (with Basil, Garlic, and Oregano)
- 2 Tablespoons Lipton Onion Soup Mix
- 1 Tablespoon Italian Seasoning
- Garlic Salt (to taste)
- Salt (to taste)
- Pepper (to taste)
- 2 Tablespoons Brown Sugar
Instructions
- Brown the Ground Sirloin: In a large heavy bottom skillet, cook the ground sirloin over medium heat until fully browned and no pink remains. Crumble it as it cooks for even texture.
- Season the Meat: Sprinkle the cooked sirloin with garlic salt and seasoned pepper, stirring well to coat evenly, then transfer it to the Crock-Pot.
- Add Chopped Onion: Add the chopped yellow onion directly into the Crock-Pot with the meat.
- Prepare and Add Root Vegetables: Peel the potatoes and carrots, dice the potatoes, and slice the carrots before adding them to the Crock-Pot.
- Add Garlic and Broth: Stir in the minced garlic and pour in the chicken broth.
- Add Tomato Paste and Seasonings: Incorporate the canned tomato paste, Lipton onion soup mix, and Italian seasoning. Then add enough water to cover the ingredients by about three inches.
- Season to Taste: Stir everything well and add garlic salt, seasoned salt, and pepper according to your taste preferences.
- Add Brown Sugar: Stir in the brown sugar to balance the flavors.
- Slow Cook the Soup: Place the lid on the Crock-Pot and cook on high setting for 6 hours, stirring occasionally to blend flavors.
- Add Peas near End: About 45 minutes before serving, add the frozen peas to the soup and stir well to prevent overcooking so they retain their bright green color.
- Maintain Pea Color: Adding peas late in cooking helps them maintain their vibrant green color and fresh texture.
- Adjust if Not Serving Immediately: If not ready to serve at the 6-hour mark, switch Crock-Pot to low heat and add water as needed to keep the soup at desired consistency.
- Serving Suggestion: Serve the soup hot with your favorite crackers or bread for a complete, satisfying meal. Enjoy!
Notes
- Adding peas late in the cooking process preserves their vibrant color and texture.
- Adjust water levels as needed during slow cooking to keep the soup from becoming too thick or dry.
- Season to taste at the end since saltiness can concentrate during long cooking.
- Serving with crackers or crusty bread complements the rich flavors of the soup nicely.
