Description

These Honey Mustard Potatoes are a delicious and easy side dish featuring tender baby potatoes cooked to a golden brown and tossed in a flavorful honey, dijon and grainy mustard, and apple cider vinegar sauce with a hint of garlic and paprika. Perfectly balanced between sweet, tangy, and savory, this recipe is ideal for family dinners or gatherings.

Ingredients

Scale

Potatoes

  • 1 1/2 pounds baby potatoes (or potatoes cut into 1.5 inch cubes)

Sauce and Seasoning

  • 2 tablespoons olive oil (or butter)
  • 1/4 cup honey
  • 2 tablespoons dijon mustard
  • 2 tablespoons grainy mustard
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, chopped
  • 1/4 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Cook Potatoes: Place the baby potatoes in a large pot and cover them with water. Bring the water to a boil over high heat and cook the potatoes until they are just tender when pierced with a fork, about 10 minutes. Drain the potatoes thoroughly.
  2. Fry Potatoes: Heat the olive oil or butter in a large skillet over medium heat. Add the drained potatoes and fry them, turning occasionally, until they develop a golden-brown crust, about 10 minutes.
  3. Make Sauce: In a separate bowl, combine the honey, dijon mustard, grainy mustard, apple cider vinegar, chopped garlic, paprika, salt, and pepper. Stir well until all ingredients are fully mixed.
  4. Toss and Finish Cooking: Pour the honey mustard sauce over the fried potatoes in the skillet. Toss to coat the potatoes evenly and cook for another 2 to 3 minutes allowing the flavors to meld and the sauce to slightly thicken around the potatoes.

Notes

  • Use baby potatoes for quicker cooking or cut larger potatoes into uniform 1.5 inch cubes for even cooking.
  • The combination of dijon and grainy mustard provides both creaminess and texture; substitute with whole grain mustard if desired.
  • Adjust the honey amount depending on your preferred sweetness level.
  • If you prefer a richer flavor, butter can be substituted for olive oil when frying the potatoes.
  • Serve warm as a side dish to grilled meats or a hearty salad.
