Description

This Italian Chicken Green Bean Bake is a delicious one-pan meal that combines tender chicken strips with fresh green beans, cherry tomatoes, and a flavorful blend of Italian seasonings, topped with gooey melted cheese.

Ingredients

Scale

Chicken and Vegetables:

  • 1 ½ pounds boneless, skinless chicken breasts, cut into strips
  • 1 pound fresh green beans, trimmed
  • 1 ½ cups cherry tomatoes, halved

Seasonings and Cheese:

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C) and grease a large baking dish.
  2. Prepare Chicken and Vegetables: Arrange chicken strips in the dish, add green beans and cherry tomatoes.
  3. Make Seasoning Mix: Whisk together olive oil, balsamic vinegar, Italian seasoning, garlic powder, onion powder, red pepper flakes, salt, and pepper.
  4. Coat Chicken and Vegetables: Drizzle seasoning over chicken and veggies, toss to coat.
  5. Bake: Cover with foil, bake for 25 minutes. Uncover, add cheeses, bake for 10–15 minutes until cooked through.
  6. Serve: Serve warm and enjoy!

Notes

  • You can use chicken thighs instead of breasts.
  • Add sliced mushrooms or zucchini for extra veggies.
  • For a low-dairy option, omit cheese or use dairy-free alternatives.
