4 large flour tortillas
Cheese:
2 cups shredded cheddar cheese

Instructions
- Prepare Tortillas: Lay two tortillas on a clean surface. Use a small paring knife to carefully cut jack-o-lantern faces into each tortilla—triangles for eyes and nose, and a jagged smile for the mouth. Set aside.
- Cook Quesadillas: Heat a large skillet over medium heat and add half the olive oil or butter. Place the remaining two whole tortillas in the pan, then sprinkle 1 cup of shredded cheese evenly over each. Top with the jack-o-lantern face tortillas. Cook for 2-3 minutes until the bottom is golden and the cheese begins to melt. Carefully flip and cook another 2-3 minutes until the second side is golden and the cheese is fully melted.
- Serve: Remove from heat and let cool slightly before slicing. Serve warm with sour cream or salsa if desired.
Notes
- For extra flavor, add sliced jalapeños or cooked chicken between the tortillas.
