Instructions

  1. Preheat the oven: Preheat to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare dry ingredients: In a medium bowl, whisk flour, baking powder, baking soda, and salt together.
  3. Mix wet ingredients: In a large bowl, beat butter and sugar until fluffy. Add egg, lemon zest, lemon juice, and vanilla; mix well.
  4. Combine wet and dry: Gradually add dry ingredients to wet mixture, mix into a soft dough.
  5. Chill dough: Refrigerate dough for 30 minutes.
  6. Shape and coat: Roll tablespoon-sized dough into balls, coat in powdered sugar.
