Description

Lemon Truffles are delightful no-bake treats combining creamy white chocolate with fresh lemon zest and juice for a bright, tangy flavor. These bite-sized truffles are coated in powdered sugar, making them perfect for a refreshing dessert or a sweet snack.

Ingredients

Scale

Truffle Base

  • 1 cup white chocolate chips
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • Zest of 1 lemon
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

Coating

  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Combine ingredients: In a heatproof bowl, combine the white chocolate chips, heavy cream, and unsalted butter.
  2. Microwave melting: Microwave the mixture in 20-second intervals, stirring between each, until the mixture is smooth and fully melted.
  3. Add flavorings: Stir in the lemon zest, lemon juice, vanilla extract, and salt until well combined.
  4. Chill mixture: Cover the bowl and refrigerate the mixture for 2 hours or until it is firm enough to scoop.
  5. Form truffles: Once chilled, scoop out small portions of the mixture and roll each into 1-inch balls using your hands.
  6. Coat truffles: Roll each ball in powdered sugar until fully coated.
  7. Storage: Store the coated truffles in an airtight container in the refrigerator until ready to serve.

Notes

  • If the truffle mixture is too soft to roll, chill it for additional time until firm.
  • For a sweeter finish, you can roll the truffles in finely crushed graham crackers or shredded coconut instead of powdered sugar.
