Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- Salt and pepper to taste
Tzatziki Dressing
- 1 large cucumber, diced and squeezed of excess water
- 1 cup plain Greek yogurt (unsweetened)
- 2 garlic cloves, minced
- 2 tbsp fresh dill weed, chopped
- Juice of 1 lemon (about 3 tbsp)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
To Serve
- Pita bread or lettuce wraps
Instructions
- Preheat Oven: Preheat the oven to 400°F (200°C). Lightly coat a baking dish with nonstick spray to prevent sticking and prepare for the chicken.
- Bake Chicken: Season the chicken breasts with salt and pepper and place them in the prepared baking dish. Bake for 25–30 minutes until the chicken is thoroughly cooked and no longer pink inside. Allow the chicken to cool before slicing.
- Prepare Tzatziki Dressing: In a bowl, combine the plain Greek yogurt, diced cucumber (after squeezing out excess water to avoid sogginess), minced garlic, chopped dill weed, lemon juice, olive oil, salt, and pepper. Mix until smooth and well blended.
- Combine Salad: In a large mixing bowl, add the sliced cooled chicken and diced cucumbers. Pour the tzatziki dressing over and gently toss everything until evenly coated with the dressing.
- Chill: Refrigerate the chicken salad for at least 30 minutes to allow flavors to meld and serve chilled.
- Serve: Serve the Mediterranean delight tzatziki chicken salad chilled alongside pita bread or wrapped in lettuce leaves for a light and delicious meal.
Notes
- For best results, squeeze the diced cucumber well to remove excess moisture before mixing into the tzatziki dressing.
- Use fresh dill for a more vibrant flavor, but dried dill can be substituted if needed (use about 1 teaspoon dried).
- This salad can be stored in the refrigerator for up to 2 days.
- Optional additions include chopped red onion or cherry tomatoes for extra texture and flavor.
- Make sure chicken is fully cooked to an internal temperature of 165°F (74°C) for food safety.
