  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1 cup long grain white rice (uncooked)
  • 1 can (14.5 oz) diced tomatoes with green chilies (undrained)
  • 1 can (8 oz) tomato sauce
  • 1 ¾ cups beef broth
  • 1 cup frozen corn
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese

Optional Garnish:

  • Fresh cilantro


Instructions

  1. Prepare the Skillet: Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened. Stir in garlic.
  2. Cook the Beef: Add ground beef, cook until browned. Drain excess grease.
  3. Add Ingredients: Stir in rice, tomatoes, tomato sauce, broth, corn, and spices. Bring to a boil, then simmer covered.
  4. Melt Cheese: Sprinkle cheddar over the top, cover and let melt.
  5. Finish and Serve: Garnish with cilantro if desired and serve warm.

  • For extra heat, add diced jalapeños or cayenne pepper.
