Description

For the Pinwheels:

  • 2 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 5 large flour tortillas (10-inch)


Instructions

  1. In a large mixing bowl, combine the cream cheese, sour cream, taco seasoning, garlic powder, and salt until smooth.
  2. Add the shredded chicken, cheddar cheese, bell pepper, red onion, and cilantro, and mix well until evenly combined.
  3. Lay out one tortilla on a flat surface and spread a generous amount of the chicken mixture evenly over the entire surface.
  4. Roll the tortilla tightly into a log and place it seam-side down. Repeat with remaining tortillas.
  5. Refrigerate the rolled tortillas for at least 1 hour to firm up. Once chilled, slice each roll into 1-inch pinwheels.
  6. Serve chilled or at room temperature.

Notes

  • You can substitute Greek yogurt for the sour cream to lighten it up.
  • For extra heat, add diced jalapeños or a pinch of cayenne pepper.
  • These can be made a day ahead and stored in the fridge.
