For the Pinwheels:
- 2 cups cooked shredded chicken
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 tablespoon taco seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 5 large flour tortillas (10-inch)
Instructions
- In a large mixing bowl, combine the cream cheese, sour cream, taco seasoning, garlic powder, and salt until smooth.
- Add the shredded chicken, cheddar cheese, bell pepper, red onion, and cilantro, and mix well until evenly combined.
- Lay out one tortilla on a flat surface and spread a generous amount of the chicken mixture evenly over the entire surface.
- Roll the tortilla tightly into a log and place it seam-side down. Repeat with remaining tortillas.
- Refrigerate the rolled tortillas for at least 1 hour to firm up. Once chilled, slice each roll into 1-inch pinwheels.
- Serve chilled or at room temperature.
Notes
- You can substitute Greek yogurt for the sour cream to lighten it up.
- For extra heat, add diced jalapeños or a pinch of cayenne pepper.
- These can be made a day ahead and stored in the fridge.
