Ingredients
Scale
Main Ingredients
- 2 cups small macaroni noodles (8 oz dried)
- 6 oz sliced ham (or more if desired)
- 15 oz mixed vegetable mix (drained)
- Optional: pickled jalapenos (drained and roughly chopped, according to spiciness level)
Dressing
- ¼ cup + 1 tablespoon mayonnaise
- ¼ cup + 1 tablespoon Mexican sour cream or crème fraiche
- Large pinch of salt
- Large pinch ground black pepper
Instructions
- Cook the Pasta: Cook the macaroni noodles according to the package instructions until al dente. Drain them well and set aside to cool to room temperature, or rinse under cool water and drain thoroughly to stop the cooking process and cool down the pasta.
- Prepare the Dressing and Combine: In a large mixing bowl, combine mayonnaise, Mexican sour cream (or crème fraiche), salt, and black pepper until the mixture is smooth and well blended. Add the cooled macaroni to the bowl and stir carefully to coat the noodles evenly with the dressing.
- Add Vegetables and Ham: Mix in the drained mixed vegetable blend thoroughly into the dressed pasta. Next, add in the chopped pickled jalapenos if using, adjusting to your preferred spice level. Finally, fold in the chopped ham ensuring all ingredients are well incorporated and evenly distributed. Taste and adjust salt and pepper as needed.
- Chill and Serve: The salad can be served immediately or for best flavor, refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled as a satisfying lunch or a tasty side dish. Enjoy!
Notes
- You can substitute crème fraiche if Mexican sour cream is not available.
- Adjust the amount of ham based on your preference for a meatier salad.
- Pickled jalapenos add heat; omit or reduce for a milder flavor.
- Ensure the mixed vegetables are well drained to prevent sogginess.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
