Instructions
- Prepare the Tostadas: Preheat your oven to 425°F (220°C). Brush both sides of the corn tortillas with olive oil and arrange them in a single layer on a baking sheet. Use two baking sheets if needed to avoid overlapping. Bake for 5 minutes, then flip the tortillas and bake for another 4-5 minutes until they are golden and crisp.
- Cook the Ground Beef: While the tortillas bake, heat a large skillet over medium-high heat. Add the ground beef and chopped yellow onion. Cook, stirring frequently and breaking up the meat with a wooden spoon, until the beef is fully cooked and no longer pink, about 6-8 minutes.
- Season the Meat: Stir in the chopped garlic, taco seasoning, and kosher salt. Cook for an additional minute until fragrant. Remove from heat and cover the skillet to keep the meat warm.
- Heat the Refried Beans: Transfer the refried beans to a microwave-safe bowl and heat in the microwave until warmed through, about 1-2 minutes depending on your microwave’s power.
- Assemble the Tostadas: Spread a layer of warm refried beans on each crispy tortilla. Top with a generous amount of the seasoned ground beef, followed by shredded lettuce, halved cherry tomatoes, chopped avocado, crumbled cotija cheese, and fresh cilantro.
