For the crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
For the caramel layer:
- 1 cup sweetened condensed milk
- ½ cup light brown sugar
- ¼ cup unsalted butter
- 2 tablespoons golden syrup (or light corn syrup)
- 1 teaspoon vanilla extract
- Pinch of salt
For the cheesecake filling:
- 24 oz (3 packages) cream cheese, softened
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- ½ cup sour cream
For the chocolate ganache topping:
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
Instructions
- Preheat the oven: Preheat to 325°F (160°C).
- Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan. Bake for 10 minutes.
- Make the caramel layer: Combine condensed milk, brown sugar, butter, golden syrup, salt, and vanilla in a saucepan. Cook until thickened and golden. Pour over crust and chill.
- Prepare the cheesecake filling: Beat cream cheese and sugar until smooth. Add vanilla, eggs one at a time, then sour cream. Pour over chilled caramel.
- Bake: Bake for 55–65 minutes. Cool in oven, then refrigerate for at least 4 hours.
- Make the ganache: Heat cream, pour over chocolate chips. Stir until smooth. Pour over chilled cheesecake.
- Chill: Chill for 30 minutes before serving.
Notes
- For a crunchier base, use digestive biscuits instead of graham crackers.
- Add a pinch of sea salt on top of the ganache for a salted caramel twist.
- Chill the cheesecake fully before slicing for clean cuts.
