For the crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar

For the caramel layer:

  • 2 tablespoons golden syrup (or light corn syrup)
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the cheesecake filling:

  • 24 oz (3 packages) cream cheese, softened
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • ½ cup sour cream

For the chocolate ganache topping:

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream

Instructions

  1. Preheat the oven: Preheat to 325°F (160°C).
  2. Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan. Bake for 10 minutes.
  3. Make the caramel layer: Combine condensed milk, brown sugar, butter, golden syrup, salt, and vanilla in a saucepan. Cook until thickened and golden. Pour over crust and chill.
  4. Prepare the cheesecake filling: Beat cream cheese and sugar until smooth. Add vanilla, eggs one at a time, then sour cream. Pour over chilled caramel.
  5. Bake: Bake for 55–65 minutes. Cool in oven, then refrigerate for at least 4 hours.
  6. Make the ganache: Heat cream, pour over chocolate chips. Stir until smooth. Pour over chilled cheesecake.
  7. Chill: Chill for 30 minutes before serving.

Notes

  • For a crunchier base, use digestive biscuits instead of graham crackers.
  • Add a pinch of sea salt on top of the ganache for a salted caramel twist.
