Marinade and Sauce

  • 4 cloves fresh garlic, minced
  • ½ cup low-sodium soy sauce
  • ¼ cup honey
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp cornstarch
  • 1-2 tbsp vegetable or olive oil (for searing)


Instructions

  1. Prepare the Marinade: In a bowl, whisk together the soy sauce, honey, freshly squeezed lemon juice, minced garlic, and cornstarch until the mixture is smooth and well combined.
  2. Marinate the Chicken: Add the boneless, skinless chicken breasts to the bowl with the marinade, making sure they are fully coated. Cover and refrigerate for at least 30 minutes, or up to overnight for deeper flavor.
  3. Preheat Skillet: Heat a large skillet over medium heat and add enough oil to lightly coat the bottom of the pan, preparing it for searing the chicken.
  4. Sear the Chicken: Remove the chicken breasts from the marinade (reserve the marinade) and place them in the hot skillet. Cook for 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
  5. Make the Sauce: Once the chicken is removed from the skillet, pour the reserved marinade into the hot pan. Stir constantly over medium heat until the sauce thickens and becomes glossy.
