For the Casserole:
- 4 boneless, skinless chicken breasts
- 1 cup long grain white rice (uncooked)
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) chicken broth
- 1 packet dry onion soup mix
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 tablespoon olive oil
For Garnish (optional):
- Fresh parsley
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil.
- Prepare Rice: Spread uncooked rice evenly in the baking dish.
- Mix Soups: In a bowl, whisk together cream of mushroom soup, cream of chicken soup, chicken broth, garlic powder, and black pepper. Pour over the rice and stir gently.
- Add Chicken: Place chicken breasts on top of the rice mixture. Sprinkle dry onion soup mix over the chicken.
- Bake: Cover dish tightly with foil. Bake for 1 hour and 30 minutes.
- Rest and Serve: Let it rest for 5 minutes after baking. Garnish with parsley before serving.
Notes
- You can use chicken thighs instead of chicken breasts.
- Enhance the dish with sautéed mushrooms or frozen peas.
- Use long grain white rice, not instant rice, for best results.
